Believe it or not, I just tried tahini for the first time the other day. I’d heard about it before, but didn’t know what it was or how to use it. For those like me, tahini is traditionally a middle eastern condiment made from ground sesame seeds. The taste reminds me very much of nut butter.
Because of its smooth consistency and mellow flavor, I thought that tahini would make an excellent ingredient in salad dressing. With a little bit of experimenting and tweaking, I’ve come up with a dressing that is sweet, savory, and super creamy.
Tahini & Garlic Dressing (With Lemon Essential Oil)
Makes approximately 1 cup.
- 1/4 cup (roughly half a head) of roasted garlic, mashed
- 1/2 cup of olive oil
- 1/4 cup of apple cider vinegar
- 2 teaspoons of honey
- 2 teaspoons of tahini
- 1/4 teaspoon of salt
- 1/8 cup of water
- 1-2 drops of doTERRA lemon essential oil
Once the garlic is out of the oven, mash it up.
The garlic doesn’t have to be perfectly mashed, it’s okay if there are a few chunks.
Next, add the olive oil and whisk it with the garlic.
Now, add the apple cider vinegar. You’ll notice the dressing starting to take shape.
Add the honey, tahini and salt, stirring after each addition. You can taste as you go in case you want to make any adjustments.
Add the water next, and lastly, the lemon essential oil. I used two drops, but you could use more or less, depending on your taste for lemon.
Give it all one last good whisking, and enjoy~
