Just like with the foods that I eat, I choose drinks that don’t have any added sugars, or pretty much anything that comes pre-made. So what does that leave me? Water, almond milk (this is the one exception), tea, and wine!
So I created a drink that crosses off all the things on my list of qualifications, and tastes refreshing.
- 2-3 chunks of mature coconut meat
- 2-3 wedges of lime
- honey (optional)
- 2 quarts of water
Squeeze the lime wedges into a pitcher, then drop them in the bottom, along with the coconut chunks. Bring about 2 quarts of water just about to a boil, then pour into the pitcher.
Let the lime wedges float for a minute or two, then scoop out & throw out.
As an option to sweeten it, you can add honey to the water.
Let the pitcher sit in the fridge for about an hour, or until chilled.
You can also add a drop of your favorite essential oil (that is safe to ingest!!) to the water.
Serve with a slice of lime.
